Chicken and Butternut Squash
Ingredients
¼ cup olive oil or oil of choice
2 small chicken breasts, cubed
1 cup diced onion
3 stalks celery, diced
1 large carrot, diced
½ of a butternut squash, cubed
2 tsp or 2 cloves of minced garlic
1 quart of canned tomatoes or 1 28 oz can
2 Tbsp tomato paste
1 cup chicken broth or bullion
1 ½ tsp Zaatar* or Italian seasoning
Instructions
Drizzle olive oil in skillet. Season chicken with salt and pepper, then sauté until cooked. Remove chicken once it is cooked.
In the same skillet add a bit more olive oil. Then add onion, celery, and carrot. Add squash. Cook about 15-20 minutes, until tender.
Add chicken back into vegetables. Add garlic, tomatoes, tomato paste, chicken broth, Zaatar or Italian seasoning, pepper, and salt to taste. Simmer for about 1 hour.
Serve in a bowl with a piece of crusty bread.

*Zaatar is a middle Eastern spice that contains sumac, thyme, sesame seeds, oregano, salt and marjoram. You can find it at specialty food stores.
