There must be thousands of recipes for zucchini bread. I’ve narrowed it down to one! This one is very moist and easy to make. It makes two loaves so one for now and one in the freezer for later.

Ingredients
2 cups all purpose flour 1Tbsp cinnamon
1 and 1/2 cups sugar 1tsps salt
2 tsps baking soda 3 large eggs
2 cups grated zucchini (do not squeeze out the liquid. 3/4 vegetable oil
Instructions
In a bowl, combine flour, sugar, soda, cinnamon and salt.
In another large bowl, combine eggs, zucchini, oil and vanilla
Pour dry mix into wet mix. Stir just until incorporated. If you like you can add 2 cups chopped walnuts. Pour into two greased 4×8 loaf pans. Bake at 350* for 50 -60 minutes.
Cool completely on a wire rack.
