HUEVOS RANCHEROS

Ingredients

3T Olive oil                                1 red bell pepper, seeded and diced

2 Anaheim peppers, seeded and diced                                         ½ cup dice red onion

2-10ounce cans Rotel diced tomatoes with chilis

1 lb cooked black beans of 2 cans

¼ cup cilantro, chopped               1T cumin

1T salt                                       1T black pepper

6eggs                                                                              Tortillas, warmed

1 sliced avocado

Instructions

Preheat oven to 350*. In a large skillet, heat oil.

Add peppers and onions and saute until softened. Add tomatoes, cook for a few minutes, and stir in the black beans, cilantro and cumin. Add salt and pepper.

Make 6 small holes in the bean mixture for the eggs. Crack the eggs into the holes. Put the skillet in the oven and bake until the whites are set 5-8 minutes.

Serve with tortillas and avocado.
