Most of the chicken I buy is bone in, skin on chicken breasts. I prefer these to the commonly used boneless, skinless breasts. They have more flavor and don’t seem to dry out when cooked like the boneless kind. I cook them as soon as I get them home from the grocery and put them in the freezer. They are convenient and offer a multitude of uses.

Pre-heat your oven to 350*
Line a baking sheet with either foil or parchment paper. Place the breast on the baking sheet. Rub with olive oil and sprinkle with salt and pepper. Bake for about 1 hour or until their internal temperature is 165*
Cool and freeze whole or you can pick the meat off the bone at this time. Save the bones if you pick the meat, they will make some good stock
