This is a great cold weather soup. You can make as little or as much as you want by adjusting the ingredients. It’s a simple recipe and you can make it yours by adding your favorite veggies.
This is a great cold weather soup. You can make as little or as much as you want by adjusting the ingredients. It’s a simple recipe and you can make it yours by adding your favorite veggies.
1 pound stew beef
1 cup diced onion
1 cup diced celery
1 cup diced carrot
1 cup diced potatoes
1 cup corn
1 cup peas
1 cup green beans
1-28ounce can crushed or diced tomatoes
1 small head of cabbage
Salt and pepper to taste
You can adjust the quantities to suit your taste.
Start by simmering 1 pound of stew beef in 32 ounces of beef broth. Simmer the beef for 2 to 3 hours. This will make sure the beef is tender.
Add your diced onion, diced celery and diced carrot. Simmer until they are tender.
Now you can add diced potatoes, 28 ounces of tomatoes, corn, peas, green beans.
Add salt and pepper to taste.
This is where I add the chopped cabbage. If you don’t care for cabbage, leave it out.
